Buffalo chicken wings are a game day and party favorite.
I actually spent part of my childhood in Buffalo before the Buffalo wing craze was a thing. I was little, but I do remember that wings were things you got at the pizza place. They were spicy, and usually, only the adults ate them. They were also messy.
These Baked Crispy Buffalo Wings are really easy to make and give you the crispy texture that the fried Buffalo wings have, but you do everything in the oven.
The Secret to Baked Crispy Buffalo Wings
The key is to use Baking Powder in the seasoning mix. After reading several articles, what the baking powder does is draw out the moisture of the wings and create air pockets that help crisp the skin.
You don't need a lot of the seasoning mix to get tasty, crispy wings. What you do need to make sure is that you are using Baking Powder and not baking soda because it will ruin the wings...trust me on this one. I did it by accident and had to throw the whole batch away. They were terrible.
To Sauce or Not to Sauce
You don't have to cover them in the Buffalo sauce. They are still delicious on their own, but I think the sauce makes them even better.
If you aren't a hot and spicy type of person, you can add more butter, less sauce, and more garlic. My recommendation is to find a combination that works for you and write it down so you can always refer to it.
