Baked Squash and Leeks

This Baked Squash and Leeks recipe was inspired by one I found by Jamie Oliver. The combination of ingredients made total sense to me, but he was making it for a huge crowd.


I wanted to make it so a small family could have this for a Holiday Meal or even as a dinner unto itself. I also wanted to make it as versatile as possible using the same ingredients but in a much smaller quantity.


The result was fantastic! The filling of the pumpkin was so delicious, and combined with the sweet pumpkin, it was a match made in heaven.


One thing that I found important is you need a lot of leeks. It shouldn't be sauce with some leeks instead it should be leeks with some sauce. The leeks get really tender, and eventually, some even just melt into the sauce.


Here's another win for this recipe. If you don't like squash or pumpkin, make the sauce, and add whatever vegetables you like! It would be delicious with cauliflower, broccoli, cabbage, over potatoes, or I even used it over chicken. Mmmmm so good.
