Easy
I'm going to say up front that I am not a coconut lover. It is not for want of trying. It is more of a texture thing than a taste thing. I've tried all different types of coconut and, well, it just isn't my thing.
I needed some gluten-free cookie recipes that would be easy to make, and I came across Ina Garten's Coconut Macaroons. The ingredients were simple, almost too simple, I thought, and as long as the coconut didn't have any gluten in it, they could be a contender.
I made a batch and tasted one right out of the oven. It wasn't half bad. Again, I wanted to like it, but alas.
So, I took them to friends to taste and get their feedback. I was blown away. All they could do was rave about them! At the end of the day, they took all the leftovers home! I thought, well, this is a winning recipe, so I'm not going to mess with it.
And that is why I've kept true to Ina's recipe here. If you are a coconut lover, you have to try making these cookies.
