Corned Beef Hash

Good morning, fellow food enthusiasts! Today, I'm excited to share a recipe for a classic breakfast dish that's sure to warm your soul and satisfy your cravings: corned beef hash.


This hearty and flavorful dish is a perfect way to use up leftover corned beef from your St. Patrick's Day feast or any other time you've cooked a delicious brisket. If you don't usually cook corned beef and cabbage for St. Patrick's Day and you still want to make corned beef hash, use corned beef from the deli. It works really well.


If you are in a different country and corned beef is only something you can find in a can, I would recommend substituting your favorite meat in this dish rather than using that. Think about doing this with bacon, ham, or smoked pork chops. Yum!


Tips for Making the Best Corned Beef Hash
  • Use high-quality ingredients: Start with good-quality corned beef and potatoes for the best flavor.

  • Don't overcook the potatoes: You want them to be tender but still hold their shape. If you are using leftover potatoes, they don't take long to cook and are perfect for this dish.

  • Add some spice: A pinch of red pepper flakes or a dash of hot sauce can add a nice kick to your hash.

  • Get creative with toppings: A fried egg, a dollop of sour cream, or some chopped chives can elevate your hash to new heights.


Ingredients you'll need:

  • Leftover diced corned beef

Here's a tip: If you can't make hash after your corned beef and cabbage dinner, chop up the meat and put it in a bag and pop it in the freezer. Depending on how much corned beef I have, I portion it out for multiple breakfasts. Then it is ready when you are.

  • Diced Potatoes

  • Chopped Onion

  • Chopped Bell pepper - I like to use red bell peppers when I can to add a bit of color to the dish. (optional)

  • Butter or oil

  • Salt and pepper to taste
