Easy weeknight chili

This is a go-to for me when I want something comforting that doesn't take a long time.


This Easy Weeknight Chili is pretty adaptable. You can make it with what you have in the house. The key is letting it simmer for at least 30-40 minutes to let the flavors blend. I will sometimes leave it much longer, and add chicken stock, tomato sauce, or water to it so it doesn't get too thick.


Here are some additional add-ins:

  • Carrots (I actually love my chilli with carrots in it)

  • Jarred Roasted Red Peppers

  • Mushrooms

  • Frozen Corn

  • Jalapeños

  • Chipotle Powder

  • Additional Garlic

  • Mexican Oregano


You can also use whatever ground meat you prefer. I like ground turkey because I find it doesn't make it too heavy, but by all means feel free to use beef, pork, or any combination you like.
