Gingerbread Biscotti

Gingerbread Biscotti are the perfect cookies to make ahead and have on hand when people stop by to visit. They keep really well once baked, and their warming spices are perfect for the season.


My big pet peeve with biscotti is when they are hard as rocks. I know some are made specifically in that fashion because that makes them perfect to dunk in coffee or tea. But really who wants to struggle to eat a cookie?


I also don't like cookies that are too sweet. These Gingerbread Biscotti run that fine line of not being too sweet. The addition of vanilla helps to bring an inherent sweetness to our senses. You don't have to drizzle the white chocolate on them, but I love the way it looks, especially at the holidays.


Make these on a chilly afternoon, and you won't be sorry. Then share with family and friends!
