I love rice of all kinds, but for years, my rice was usually an overcooked mess, all clumped together rather than those light, fluffy individual grains.
Then, I was inspired by Jamie Oliver and his method of cooking rice, so I thought I would give it a try.
The key to this method is keeping it simple. There is no rice cooker, just a pot, and a cup.
Here's how to cook full-proof rice every time.
Begin by heating up some water in a tea kettle or microwave.
Melt a bit of butter in a pot. You don't need much, maybe a teaspoon for a batch of rice.
Add 1 cup of rice. You can use a measuring cup or any cup that can hold hot water. Stir the rice around in the butter until well coated. The rice may begin to look translucent and brown a bit. It's all good.
Using the same cup you used to measure your rice, add 2 cups of warm water to the rice. It will bubble up, but that's okay. Add 1/2 teaspoon salt.
Immediately turn down the heat, and put a cover on the rice.
Cook for 20 minutes. It should be done, but if there is still some water in the pot, continue to cook, checking it every 3 minutes or so.
There you have it, perfectly cooked rice.
You can add whatever you like to the rice before it cookes such as different spices and herbs. You can also use stock instead of water and salt. No matter what you do, give this method a try and I think you will be pleasantly surprised.
