Ina Garten's Butternut Squash Salad

I first saw this recipe on Ina Garten's show, The Barefoot Contessa. I thought, "What is there not to like in a salad like this?" Warm butternut squash, tangy apple cider vinaigrette, crunchy nuts, and spicy arugula are a perfect combination.


One of the things that make it is the warm vinaigrette and not a lot of it. Just a little drizzle is all you need because the sauce's reduction enhances the flavors.


Lastly, don't leave off the Parmesan Cheese. That slight saltiness balances out the sweetness of the dressing, squash, and cranberries. If you don't like Parmesan, you could use a little feta or, for a bit less salt, goat cheese.


When I looked at the date of the original recipe, I was shocked to see it was 2008. I've been making this salad for all this time.
