Italian Corned Beef

I'm always on the lookout for new and exciting ways to use seasonal products, and recently, I came up with a recipe for corned beef cooked in a rich tomato sauce. Intrigued, The result was a flavor explosion that was both comforting and satisfying.


I call this dish "Italian Corned Beef," and it's quickly become a favorite during March when corned beef is on sale. The tomato sauce adds a depth of flavor that complements the corned beef perfectly, and the dish is so versatile that it can be served in a variety of ways.


Tips for making Italian Corned Beef
  • You don’t need a big piece of corned beef.  A little goes a long way, which is great because it stretches your dollar.

  • Use your favorite homemade tomato sauce or store-bought. Add your favorite Italian seasonings to the tomato sauce for extra flavor.

  • Use a Dutch oven for the best result, but you could also use a slow cooker.  If you use a slow cooker, reduce the sauce once the beef is cooked to intensify the flavor.

Note: Don’t use a cast iron Dutch oven for this because of the acidic nature of the sauce.  Instead make sure you are using a glass, stainless steel, or enameled cast iron Dutch Oven.

  • Serve the corned beef over pasta, rice, or polenta.

  • Top with fresh herbs, grated cheese, or a dollop of sour cream.


I encourage you to experiment with different flavors and ingredients to find the perfect combination for your taste buds.
