In the Kitchen
Things get hectic during the Holidays, and you may find yourself in a frenzy as you finish up the final details. Then you realize you need to make something to bring to a Holiday celebration, or you have unexpected guests and need one more thing for your holiday table.
These Last-Minute Holiday Recipes are great ideas that you can whip up pretty quickly and reduce your stress at the same time.
Ham & Brie Crostini
What's better than melted cheese on bread? These are so simple. Toast some bread, then add deli ham and a slice of brie and put back in the oven until the brie melts. Done!
You can make it even more fancy by topping it with a slice of pear, a dollop of cranberry sauce, or even some store-bought chutney.
Four Ingredient Soups
My Four Ingredient Soups have been a lifesaver for me. They come together in about 30 minutes and taste delicious.
The basic method is to saute onions in olive oil or butter and add your veggies. Cover with water and a bouillon cube, and cook until the veggies are tender, then blend.
Here are some ideas:
"Cream" of Mushroom Soup (5 ingredients)
Serve in small cups, and you will warm up your guests.
Navy Bean Dip
This Navy Bean Dip couldn't be easier. Just puree a can of Navy Beans with a clove of garlic, olive oil, and feta. Add any other herb you want and salt & pepper to taste. In minutes, you have a flavorful dip that can be served with veggies, pita chips, or even as a spread for a sandwich.
Roasted Winter Vegetables
Here's a unique idea for an appetizer and definitely a perfect dinner side. Gather your favorite winter veggies. Toss with olive oil, salt, pepper, and rosemary. I like to include garlic cloves (unpeeled). Pop them into a 425F oven. They will cook quickly.
As an appetizer, when cut into finger food size, your guests will go back for more nibbles. Encourage them to squeeze the garlic on the other veg.
German Beer Cheese & Pretzels
You can make up the German Beer Cheese Spread ahead of time and have it in the refrigerator. Pair that with vegetables or Bavarian-style pretzels that you can find in the frozen food aisle, and you have a wonderful and quick appetizer that will make a lot of people happy.
Here's the recipe for the German Beer Cheese Spread from Taste of Home.
Spiced Maple-Glazed Pecans
Submitted by a friend on our Facebook group, I've made these several times to a lot of oooos and ah's. They are really simple.
Take a little over a cup of pecans. Add 3 tablespoons of real maple syrup, about 1/4 teaspoon salt, a pinch of cinnamon, and cayenne. Mix together and bake at 375 for about 10 minutes, or cook in a non-stick skillet. Keep stirring so they don't burn.
Whipped Feta Dip with Hot Honey
This is a delicious dip to have on hand. I use this recipe from Dished, but use the Hot Honey from Trader Joe's or Mike's Hot Honey.
I like the coolness of the dip with the spiciness of the honey. Serve with veggies, pita chips, or your favorite chip.
Pigs in Blankets
Sure you can go for the traditional pigs in blankets and have them done in an instant, but why not think outside the box?
What about using:
Kielbasa
Chorizo
Chicken Sausage
Vegan Sausage
Breakfast Sausage (for breakfast buffet)
In England, instead of pastry, they wrap their sausage in bacon...another alternative.
Ultimate Last-Minute Holiday Recipe - Popcorn!
If you have popcorn and oil in your pantry, you can feed a crowd at the last minute...and they will love it.
Consider spicing things up a bit beyond butter by adding:
Parmesan Cheese
Ranch Seasoning Mix
Everything Bagel Seasoning Mix
Barbeque Seasoning Mix
Old Bay
