Oh, I love the creaminess of risotto. This version is unusual because of the roasted mushrooms. I got the idea from a recipe from Jamie Oliver. The mushrooms add additional texture and because of the lemon an unexpected brightness.
If you want to add a depth of flavor, you could saute some bacon with the onions and celery. If you don't like rice, I've made this recipe with steel-cut oats or even barley. Both make a delicious and slightly different risotto.
