Panzanella Salad is one of my favorite salads to make on the spur of the moment. It reminds me of summer and is a great way to use up oldish bread.
I like to serve it the day I make it because the bread absorbs some of the liquid but still has some crunch. You can serve this cold or at room temperature. Even better, it can sit out at a barbeque because there is no mayo. I would omit the mozzarella cheese if I were putting this on a picnic table just to be sure.
