Pumpkin Stew

I was inspired to make this Pumpkin Stew after reading about a woman making something similar for her family.  There wasn’t a recipe in the story, but only the ingredients so I had to use my imagination to come up with something I find simply divine.


This hearty pumpkin stew is a delicious and satisfying alternative to other meat-based stews. It is packed with flavor and nutrients, and it is sure to warm you up on a cold day.


Why choose pumpkin stew over meat-based stews?

There are many reasons to choose pumpkin stew over meat-based stews. Pumpkin is a good source of fiber, vitamins, and minerals. It is also low in calories and fat. Pumpkin stew is also a hearty and satisfying meal that will keep you feeling full for hours.


The chickpeas have a lovely, slightly firm texture that contrasts nicely with the softness of the pumpkin and zucchini in the stew. They add a satisfying bite and heartiness. While fairly mild on their own, chickpeas have an earthy, nutty flavor that complements the sweetness of the pumpkin and the warming spices. They also absorb the flavors of the other ingredients in the stew beautifully.  Because of the protein & fiber, they help you feel full and satisfied after eating a bowl of this stew.

Tips:

  • This stew is even better the next day. (The picture above is right after it finished cooking. The more you cook it, the more the pumpkin melts into a creamy texture, and this is part of what makes it better the next day.)

  • For a thicker stew, mash some of the pumpkin with a fork before serving.

  • You can add other vegetables to this stew, such as celery, green beans, or corn.

  • If you don't have stewed tomatoes, you can use fresh tomatoes instead. Just dice them and add them to the pot with the other vegetables.

  • This stew is also delicious served with a dollop of sour cream or plain yogurt.
