Roasted Shrimp Cocktail is an excellent way to uplevel your traditional shrimp cocktail.
The secret is to par-boil the shrimp in a deeply seasoned broth. I like to use Old Bay, and I use it a lot. Depending on the number and size of the shrimp, I may put in multiple tablespoons!
After parboiling for literally less than a minute, again depending on the size of your shrimp, you drain them and dust them lightly with a bit more Old Bay.
Pop them in the oven for a couple of minutes to finish cooking, and the result is delicious!
