This simple quiche is something you can whip up for breakfast, brunch, lunch, and even dinner. It is hearty and served along with a salad, you have a perfect meal.
Serves 2
Ingredients:
3 Eggs
1 cup Non-fat Greek Yogurt
1 tsp Flour
1/4 tsp Salt
Pinch of Pepper
Method:
Preheat the oven to 350 degrees Fahrenheit
Mix all of the ingredients in a bowl. The flour helps keep the Greek yogurt from separating.
Spray a baking pan with oil. Pour in the mixture.
Bake for about 25 minutes or until puffed and golden. Bring to the table and serve.
Notes:
The tang from the yogurt gives the impression there are more ingredients in the quiche than yogurt and eggs.
You can add cheese to the mixture. I like Cheddar, Swiss, Feta, Gruyere, or Parmesan.
You can add any veggies to the mixture as well. Make sure they are already cooked, and drained of any excess liquid.
You can also add ham, sausage, bacon, or other meat.
