I was. So, one random Thursday afternoon, I whipped this Spicy Lentil & Tomato Saladup for lunch between meetings. It was delicious and satisfying.


Combining the heartiness of lentils with the freshness of tomatoes, feta, and arugula, this salad is sure to become a new favorite. And with a kick of spice from garlic, onion, smoked paprika, and spicy canned tomatoes, it's anything but boring.
