The only reason I labeled my Sunday Morning Egg Cups is that you do have to make a sauce before assembling, but if you are comfortable with that, these come together really easily.
The recipe was inspired by an episode of Rachel Khoo's Little Parisian Kitchen, where she makes these in the tiniest of kitchens and calls them croque madame muffins. They looked so easy and delicious that I had to try them.
Now, I'm a convert. These are perfect to make for a big group because you can create an assembly line with the ingredients and then bake them all at the same time. They come out all hot and ready to eat. No individual eggs to make.
They are also good for a special brunch with friends, family, or someone special. You wouldn't make these during the week, but on the weekend, they are perfect. I would even make these if I stayed at a vacation home or Airbnb because the ingredients are easy to find.
The steps are illustrated below:
Make a white sauce
Paint regular sandwich bread with melted butter
Fold the bread into a muffin tin (I use a large muffin tin with deeper sides)
Place a pice of ham in the bread cup
Fill with egg and then sauce.
